Bedtime Cookies for Beautiful Old Broads

I stood on the back porch just after dusk last night and watched Venus beaming in the ruby glow of the sunset. It was clear and quiet.  And I pondered on something deep and meaningful and moving to start my first post for 2014.  Only thing is chocolate got in the way. 
Instead of pondering life issues, I pictured the cookies I planned on eating before bed.  Then I realized that while I told you to eat cookies in bed in my poem, I failed to tell you what kind of cookie.  Chocolate, of course.  Rich dark chocolate.  My recipe for these mouthwatering treats is easy.
Please, please be assured this is not a cooking or recipe blog...well, okay just maybe once in a while.  Yes, I admit to being a foodie.  When I go into San Antonio, my first stops are usually Trader Joes and Central Market.  Well, thats a whole nother blog isn't it?  I keep discovering new treasures at Trader Joes.  But back to the cookies.  Here is my recipe.  I cut back on the sugar so if they are too chocolatey (I can't imagine) add a bit more sugar.  and I use Amaretto in place of vanilla.  Also use King Arthur White Whole Wheat flour.  Works well and healthier too.

                                                                        Bedtime Chocolate Cookies

5 oz. semi sweet chocolate squares
5 oz. bittersweet chocolate  (use at least 70% cacao)
1/2 cup brown sugar
1/2 stick butter
1 egg  beaten
3/4 cup flour
1/4 tspn. baking powder
1 tbln. Amaretto or vanilla   

Method:  Chop chocolate.  Set aside half.  Place remaining in bowl and micro on low level till melted. Stir till smooth and add br. sugar, melted butter, egg, vanilla and flour.  Mix and stir in remaining chopped chocolate.  Batter will be stiff.  Drop by spoonfuls onto cookie sheet.  Bake at 350 for 1-12 minutes.

Come to think of it--what is deeper or more meaningful that a warm homemade chocolate cookie on a chilly evening.          Goodnight.
